This week, we're stopping in South Jersey. New Jersey is sandwiched between two large cities: New York City in the northeast and Philadelphia in the southwest. Benjamin Franklin called her "a barrel tapped at both ends." South Jersey is often recognized as the area in New Jersey within the influence of the Philadelphia metropolitan area or Delaware Valley and that's where we met up with Allrecipes cook, Jaynine and onto shopping at Berlin Farmer's Market for some supplies and some hot sauce. Also close by are the headquarters of Campbell's Soup in nearby Camden.
Crunchy Coconut and Lime Burgers
This perfect summer twist on a barbeque favorite will make you feel like you are beachside. Serve with either sweet potato
fries or for a more tropical flair, serve with fried yucca and a mojito! On the stove or on the grill, these are a great
change from the average summer fare!
A well-known trick for making the perfect hamburger patty is to add an indentation or small "well" at the center of the
patty before cooking or grilling to prevent the burger from balling up and not cooking properly. Additionally try keeping
the meat as cold as you can while making the patties. If you have lots of patties to make, work in small batches while the
rest remains in the fridge.
Let the patties stand covered for one hour allowing the meat internally to reach room temperature. This allows the
outside and inside of the meat to reach temperature evenly and lets the spices infuse into the meat while cooking.

A medical student, she notes that many medical students and residents eat poorly though that's not really a surprise - the
days are packed with work from sun-up to sun-down. There are no planned meals because there can't be. Food is a quick bite

Leaving Philly, we crossed the Walt Whitman Bridge into South Jersey. South Jersey presents an interesting, diverse, exciting and surprising region of the northeast. On our way to Jaynine's kitchen we stopped to look in through the gates of Clementon Park / Splash World, a turn-of-the-century park with a wooden roller coaster, thrill rides, zoo animals, and a water park. Unfortunately, we were too early to enjoy the rides and the promised reprieve from the summer heat.
Famous son, Walt Whitman lived out his final years in nearby Camden, New Jersey. Whitman wrote in the preface to the 1855 edition of Leaves of Grass, "The proof of a poet is that his country absorbs him as affectionately as he has absorbed it." He believed there was a vital, symbiotic relationship between the poet and society. I'd like to take that a step further and posit that there is a vital relationship between the cook and society or community. At Allrecipes.com it started with member MichelleJ, and a charismatic kitchen figure by the name of Chef Tony. While posing for a photo Chef Tony fell over and broke into numerous pieces. However, this story had a happy ending, and after gluing Chef Tony back together again, MichellJ decided to share him with the rest of the Allrecipes.com community! He traveled the world, being photographed with a plethora of incredible dishes and recipes. Chef Tony has since retired but I now have the distinct pleasure of following in his plastic shoes, exploring the kitchens of home cooks around the country, learning the tips, tricks, secrets, and stories behind the recipes that make up Allrecipes.com. It's a great opportunity to honor what the community started and perhaps enjoy a game of one-upmanship with Chef Tony!
Now, to tie it all together Chef Tony was here. Yes, Chef Tony has been here, in Jaynine's kitchen before me. But he didn't get to sample her delicious Crunchy Coconut and Lime Burgers as I did! Luckily, there was a doctor in the house to bring me back from this self-induced food coma!
