Mango Chicken Piccata

This week, Allrecipes' cook Sara, shows Michael how to make her delicious Mango Chicken Piccata from fresh mangos exploding with the taste of summer. Once you've tried Sara's tangy yet delicate entree, you won't hesitate to make it for company. The chicken cooks up golden brown, then is simmered in a delicious soy sauce, balsamic vinegar, honey, sesame oil, lemon juice, and mango nectar. MMMmmm!

Cooking Tips

Q: Are there other substitutions for chicken that work well?
A: Yes! Pork can be substituted for the chicken and vegetarians can use thin slices of tofu, or eggplant.


Q: What is the best way to tell if a mango is fresh?
A: Mangos are in season from May to September. When you buy a mango, it should have a fragrant, fruity aroma and yield slightly to pressure from your thumb. It will ripen sitting on your counter, or you can speed the ripening process by sticking it in a paper bag.

Chicken Piccata is one of those classic dishes that is relatively easy to master, quick to prepare, and always comes out tasting great. When I first met up with Sara, she was vibrant, full of energy and ready to go and we jumped right in making her Mango Chicken Piccata. Sara's cooking was obviously influenced by her Venezuelan background. Venezuela shares much of the Caribbean influences in its flavors, and the fresh mango addition to her sauce was appropo. A mango is one of those fruits that people often avoid buying because they don't know how to cut them. Sara quickly and easily showed me her tried and true method for getting the "meat" from this delicious fruit.


This dish was quite easy to make and soon we found ourselves diving into this aromatic dish. Sara, all I can say is that it was delicious and next time I'm in Texas, I'm stopping in for more of your home cooking!
