Temple has been an Allrecipes member since 2006 and a devotee of Allrecipes.tv. She is a mom and wife and CEO of the household. Previously working in the TV industry for 5 years and shooting videos and photography for friends, it is ironic that she is now on the other side of the camera for "What's Cooking?". A Fort Worth, Texas resident the majority of her life, she LOVES Texas. She loves to entertain and enjoys spending time with her family and friends whenever possible. She likes to keep her meals simple and easy but takes the opportunity on the weekends to try new recipes.
Her outgoing personality and fun spirit is evident on camera as she prepares her Stuffed Jalapeño Firecrackers with her Pepper Poppers Club. And her friends are a HOOT!
Q: How much stuffing should I make?
A: An average size jalapeño pepper will hold about 1 ounce of stuffing, so if you're making 20 poppers, you'll need about 20 ounces of your final stuffing mixture. This is a general rule as pepper sizes can vary.
Q: Aren't poppers fried?
A: In restaurants, you'll typically find the deep fried variety, but there's a range of cooking options. Poppers can also be fried in a pan with oil, baked, grilled, and more. Healthier jalapeño poppers are baked or grilled, so keep this in mind for your cooking considerations.
Q: Should I wear gloves when working with jalapeños?
A: It is highly recommended. You may not notice it right away, but an hour later, you may rub your eyes and suddenly understand why gloves are recommended.
Q: Are all jalapeño's created equal?
A: While most jalapeño chiles have a steady, reliable medium heat, don't be surprised to bite into one that might explode on the Scoville scale. Be prepared with a glass of milk, some bread, or whatever antidote you favor just in case!
"I feed him interesting food, like chutneys and sardines and jalapenos, because I'm training him to be an adventuresome eater." ~ Michael Gross
Right out of the gate, Temple said that if she could be any food, it would be an appetizer. She loves having parties with nothing but appetizers, saving up recipes until the perfect time and then throwing down everything from easy finger foods to fancy hors d'oeuvres!
Arriving at Temple's home, we set right to making her delicious Stuffed Jalapeño Firecrackers! Texas torpedoes, jalapeño slammers and armadillo eggs are all amped-up names for the humble and versatile jalapeño popper. Whether stuffed with cheddar cheese and deep-fried or wrapped in bacon and grilled, jalapeño poppers are a crowdpleaser welcomed at any summer get together.
I love peppers at the upper end of the Scoville scale but know that not everybody can stand up to the heat of a "stout" pepper. Temple was ready to show me her method of splitting the difference and making poppers for the less adventuresome as well as a G-rated version that even the kiddos would enjoy. Taking some fresh jalapeños, we sliced them right down the middle, leaving the stem on one side. It was as simple as leaving the seeds in one half and removing them on the other. Simple! Then, lathering each half with a generous dollop of cream cheese and some cajun seasoning, we finished them up by wrapping in thick slices of jalapeño bacon, holding them together with a toothpick, and threw them in the oven for 8-10 minutes each side.
Leaving Temple to mind the poppers, I took off to pick up the competition in this week's "Porch Popper Pop-Off!" One by one, we loaded up Temple's mom, Cindy, her cousin, Alison, and friend, Frances, and headed back to Temple's. It was a difficult ride for me as the delicious smell of 3 different popper recipes slowly circulated throughout the van. Nevertheless, we made it back and joined Temple on the back porch for a Popper Pop-off! Can I say I was in heaven? Brisket stuffed poppers, chicken wrapped poppers, fried poppers, jalapeno bacon poppers...DELICIOUS!
I took the cowardly path and declared the challenge a 4-way tie. Like Texas snowflakes, no two poppers were alike, and I enjoyed every one of them! Thank you, Temple!
