Join us this week from Chicago, Illinois! Recently ranked as the 5th best food city in America by residents and visitors (Travel + Leisure's 2010 America's Favorite Cities Survey), Chicago's abundance of culinary delights is the stuff of legend. Pizza, the Chicago style Hot Dog, and the Italian Beef sandwich are definitely in the top 10. This week, Allrecipes' cook, Kim whips up delicious chicken meatballs with spaghetti, sure to be another favorite.
This week's dish might be just the ticket the next time you're faced with the challenge of preparing chicken in a new way. Chicken meatballs are a great alternative to beef or pork meatballs. After browning the meatballs on all sides, they are added to the sauce which will enhance the flavor of both the sauce and the meatballs. This delicious, healthy twist on traditional spaghetti and meatballs is sure to become a family favorite! View the Recipe >>>.
If you can't find ground chicken, buy boneless, skinless chicken thighs and process in a food processor until coarsely ground. Or simply substitute ground turkey.
Baking the chicken meatballs is a healthy alternative to pan frying.
When making meatballs, to prevent the chicken mixture from sticking to your hands, keep a bowl of water nearby to dip your hands into.

Jenn's Out Of This World Spaghetti and Meatballs
This authentic spaghetti and meatballs recipe is made with fresh oregano and parsley. Because the meatballs are cooked in the sauce, they are tender and savory.
Allrecipes' cook Kim is a native Illinoisan, busy wife, and mom to three who works full time as the Illinois Volunteer Coordinator for the Girl Scouts of America. She loves her work and loves to cook healthy, interesting meals for her family calling herself "Chicago's Cooking Diva". She loves Allrecipes.com and says it has helped improve her cooking and given her more variety in the family's meals.
When Kim and her family dine out they never eat at the same restaurant twice. Kim is constantly trying new things and recipes and is committed to never repeating anything twice unless it is REALLY good. Kim says, "I'm a cook who loves to have fun in the kitchen with my family and friends. I feel my kitchen is the heart of our home. I'm the type of cook that welcomes adventure in the kitchen; when I'm out of an ingredient, I don't let that slow me down. My creativity kicks in and exciting dishes are born. If I were a food, I'd be a jalapeno pepper because I have a spicy personality and I add a bit of flavor to everything I do!"
"On top of spaghetti, all covered with cheese, I lost my poor meatball, when somebody sneezed."

I really like my job! Here I am, week to week playing wingman to wonderful cooks all across America, sharing and showing their amazing recipes and more! This week is no different! I met up immediately with Allrecipe's cook, Kim and her dynamic family, similar in ages to my own brood back home in Seattle. Boy, did they have personality!
It was a beautiful day we set out for a tour of Chicago. We headed first to Cloud Gate, a 110-ton elliptical sculpture (not unlike a giant kidney bean) which reflects the city's famous skyline and the clouds above. A 12-foot-high arch provides a "gate" to the concave chamber beneath the sculpture, invites visitors to touch its mirror-like surface and see their image reflected back from a variety of perspectives. From there we went over to the Maxwell Street Market, a well-known flea market with several Mexican food stands offering authentic fare like enchiladas, tacos, tamales, and horchata. We could not resist buying vanilla churros for the young ones!
After our tour of Chicago and the market, we'd built up quite an appetite so we headed back to Kim's place to get busy cooking. What's cooking you might ask? This week it's chicken meatballs and spaghetti! Kim got me started right away rolling the ground chicken and ingredients into fifty-cent-piece size balls. As we worked together, it was easy to see where the kids got their personality! Kim is confident in the kitchen and definitely a cooking diva and queen of her domain. Her desire and committment to making healthy and delicious meals for her family while at the same time keeping it exciting makes for good eating around this Chicago dinner table. And for this wingman! Thanks, Kim!
